Street-Side Rocket Fuel

WHERE THE DAY STARTS WITH COFFEE STRONG ENOUGH TO POWER A MOTORBIKE.

Our mornings began with “rocket fuel” — jet-black vietnamese coffee poured over ice and sweetened with condensed milk. Street vendors, tiny stools, constant chatter. It’s where we first felt the pulse of saigon and the spark for hop’s new coffee range.

We thought Saigon had the best bánh mì — until Hoi An. The pâté was unreal, rich and silky, and it’s now inspiring a new layer in our own recipe back home. Proof that even classics can evolve.

Meeting the grandmas

TWO GRANDMAS, ONE MISSION: PERFECT PORK BELLY.

In Hanoi, we found a tiny spot run by grandmas who roast pork belly all day. Nothing else. Their technique — patient, precise, full of pride — sparked one of our favourite developments: crispy pork belly, HOP-style.

Market haul in hand, we cooked at a friend’s home under his mum’s watchful eye. The welcome was pure Vietnam: warm, generous, like family. That same spirit lives at HOP — real hospitality and a sense of community.

In a previous trip we discovered Cơm Bình Dân — simple, everyday eateries where everyone eats side by side. Quick, affordable, nourishing, full of flavour and community. That spirit became the blueprint for HOP itself.

GIVING BACK TO WHERE IT ALL BEGAN. 

On our last day we visited KOTO – Know One, Teach One, a social enterprise training young people in hospitality. Meeting Tân Sư Mai, a student we’ve sponsored for years, brought everything full circle — a reminder that HOP’s story has always been about people first.
